I N G R E D I E N T S

  • ½ cup organic oats
  • 1 tablespoon chia seeds
  • 1 cup vanilla almond mylk (see page 88 or use store-bought)
  • Squeeze lemon juice + 1 teaspoon lemon rind
  • 1 teaspoon honey or maple syrup (optional)
  • Pinch sea salt
  • ½ cup fresh berries
  • ½ green apple, thinly sliced
  • Activated buckinis, to serve
  • Coconut flakes, to serve

M E T H O D

  1. In a jar or glass container, add the oats, chia seeds, liquid, pepitas, lemon juice and vanilla coconut yoghurt. Stir well to mix, then place the lid on and store in the fridge overnight.
  2. Serve in the morning topped with fresh berries and lemon zest.
