These crackers make a wonderful snack. Rich in protein, healthy fats and micronutrients (such as zinc, iron and calcium), they will keep your blood sugar levels stable. They pair perfectly with homemade hummus or tzatziki.

INGREDIENTS

  • ½ cup ground flaxseeds
  • ¼ cup sunflower seeds
  • ½ cup pepitas
  • ¼ cup sesame seeds
  • ¼ cup psyllium husks
  • ½ teaspoon sea salt
  • 1 ¼ cups filtered water
  • 2 tablespoons nutritional yeast
  • 2 teaspoons dried thyme

METHOD

  • Preheat oven to 180 degrees Celsius. Combine all the ingredients in a large bowl and let sit for 15 minutes to allow seeds to absorb liquid and thicken.
  • Line 2 large baking trays with baking paper. Spread the mixture onto the baking paper and place another sheet of baking paper on top. Use a rolling pin to flatten into a very thin, even slab. Remove the top baking paper and score into desired cracker shape using a knife.
  • Bake in the oven for about 30 minutes, until crispy and golden.
  • Turn off the oven and allow crackers to sit in the oven for another hour to become crispier.
  • Remove from oven and let cool completely before breaking into pieces.
  • Crackers can be stored in an airtight container for up to one week.
