With the cooler change of Autumn in the air, the mornings have cooled down enough to happily eat a more warming breakfast. Whipping up a batch of smoky, gourmet baked beans is such a delicious and nourishing way to start your day. The sun-dried tomatoes add a delicious lick of flavour and the fresh toppings of avocado and coconut yoghurt perfectly the smoky flavours. This brekkie will fuel you with fibre, protein and iron (along with many other wonderful vitamins and minerals)! I know beans can get a bad wrap, but they are an amazing prebiotic that feed the good bacteria in your gut and help your body to fight off disease. And eating them on a bed of freshly toasted sourdough tastes divine.

I N G R E D I E N T S

*serves 2-3

For the baked beans:

  • 1 teaspoons extra-virgin olive oil
  • 1 onion, peeled and diced
  • 2 garlic cloves, crushed
  • 1 teaspoon smoked paprika
  • 1 teaspoon wholegrain mustard
  • 1/2 teaspoon dried chilli flakes (optional)
  • 1/2 red capsicum, diced
  • 450 g tomatoes, roughly chopped
  • 6 sun-dried tomatoes
  • 1 tablespoon apple cider vinegar
  • 1 x 400 g cans cannellini beans, drained and rinsed
  • Sea salt and black pepper, to taste

To serve:

  • Bread of choice (gluten-free, sourdough, etc.). Gluten free bread or organic sourdough
  • Fresh thyme (or herb of choice)
  • Rocket
  • Avocado and/or coconut yoghurt

M E T H O D

  1. Heat olive oil in a large pan over medium heat. Add the onion and sauté for 5 mins, until translucent.
  2. Add the garlic, paprika, wholegrain mustard and chilli flakes. Cook for 2-3 minutes, stirring regularly.
  3. Add the apple cider vinegar, capsicum, fresh and sun-dried tomatoes. Simmer for 10—15 minutes, stirring occasionally.
  4. Transfer mixture from the pan to a blender and roughly pulse to obtain a chunky sauce texture.
  5. Pour mixture back into pan and add the beans. Cook until evenly heated. Turn off heat. Season with salt and pepper.
  6. Serve baked beans on toasted bread. Top with fresh rocket and thyme. Add some avocado or coconut yoghurt to balance your meal with some yummy healthy fats.
